On my journey to overcoming an autoimmune disease I found wellness through daily exercise, and most importantly, by removing gluten from my diet. I was able to lose over 60 lbs. in 1 year by eliminating gluten and doing cardio exercise. I was thankful for my physical and emotional results from this transformation. Enlightened by the health benefits, I converted my family over to gluten-free eating. It's easy, yummy, and the kids really don't know the difference. There are a lot more people becoming familiar with the affects of gluten, however, many are still unaware what gluten is and what foods to stay away from. My hope is that by seeing all the photos of my home cooked meals, you will recognize your own family favorites, and realize that being gluten-free isn't a prison sentence.
