This recipe is based on Guiditta GiasolliÕs Spaghetti sauce recipe. Guiditta made this sauce from 1950-2005. The original recipe was written down by VincenzoÕs Aunt Norma one day when Norma, GuidittaÕs daughter, asked for the recipe. Guiditta (always known as Nonna, Grandmother in Italian, to Vincenzo) stated, ÒI donÕt use a recipeÓ. So, Norma said she would stay with Nonna all day while she made her sauce and write down the recipe.
Nonna loved to have company and loved to play cards. During the time when the sauce simmered, she would play cards with Norma. Occasionally, Nonna would get up to taste the sauce. Nonna would then grab something to season the sauce to adjust the flavor, at which point Norma would say, ÒWait, what are you adding?Ó This process was the origin of the original recipe.
